Raspberry and Dark Chocolate Flapjack

WOW a completely different taste from the raspberry and white chocolate we made a few months ago. Still far too sticky tho, but this was because we didn't have enough oats (and yesss I put in too much golden syrup again). But the most amazing taste when the mixed spice hits.

It's a fantastically easy recipe for the kids to help with as well.

To make these you will need......

170g Butter
60g Light Brown Sugar
200g Golden Syrup
1tsp. mixed spice
300g Rolled Oats
100g Raspberries
75g Plain Chocolate, roughly chopped

Cake Tin

Method:

1) Preheat oven to 180◦C/ Gas Mark 6, grease (and line if required) a cake tin.
2) Melt the butter in the microwave.
3) Add the sugar, syrup and mixed spice
4) Stir in the oats until well combined before carefully folding in the raspberries. Finally stir in the plain chocolate (it will melt a bit but this is completely fine as it will still leave plenty of chunks in the flapjacks).
4) Pour and press gently into the prepared tin and bake for 25 minutes until golden.

Let children lick the spoons!!!

5) Ideally leave to cool before slicing into small squares..... unless the kids are like mine and want it straight out the oven!!

if you have any left serve on it's own or cold with warm custard.
